Ingredients

For the Soup

  • 2 medium sweet potatoes, peeled and diced
  • ½ cup red lentils (masoor dal), rinsed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 medium carrot, chopped
  • 1 tbsp olive oil
  • 1 tsp Sarbu Himalayan Pink Salt
  • ½ tsp freshly ground black pepper
  • ½ tsp cumin powder
  • ½ tsp smoked paprika (optional)
  • 4 cups vegetable stock or water
  • 1 tbsp fresh lemon juice

Instructions

Step 1: Sauté the Aromatics

  1. First, heat the olive oil in a large pot over medium heat.
  2. Next, add the chopped onion and sauté for 3–4 minutes until softened.

Step 2: Cook the Vegetables
