Ingredients

For the Soup

  • 2 medium sweet potatoes, peeled and diced
  • ½ cup red lentils (masoor dal), rinsed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 medium carrot, chopped
  • 1 tbsp olive oil
  • 1 tsp Sarbu Himalayan Pink Salt
  • ½ tsp freshly ground black pepper
  • ½ tsp cumin powder
  • ½ tsp smoked paprika (optional)
  • 4 cups vegetable stock or water
  • 1 tbsp fresh lemon juice

For Garnishing

  • Fresh coriander or parsley, chopped
  • Pumpkin seeds (optional)
  • A drizzle of olive oil

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 3–4 minutes until softened.
  3. Stir in the garlic and ginger, cooking for another minute until fragrant.

Step 2: Cook the Vegetables

  1. Add the diced sweet potatoes, carrot, and rinsed lentils.
  2. Season with Sarbu Himalayan Pink Salt, black pepper, cumin powder, and smoked paprika.
  3. Mix well to coat the vegetables with the spices.

Step 3: Simmer

  1. Pour in the vegetable stock or water.
  2. Bring the soup to a boil.
  3. Reduce the heat, cover, and simmer for 25–30 minutes, or until the sweet potatoes and lentils are tender.

Step 4: Blend

  1. Remove the pot from the heat.
  2. Use an immersion blender (or carefully transfer to a blender) to blend the soup until smooth and creamy.
  3. Stir in the lemon juice and adjust the seasoning if needed.

Step 5: Serve

Ladle the soup into bowls and garnish with fresh herbs, pumpkin seeds, and a light drizzle of olive oil.
