Ingredients

- Sprouted green moong – 2 cups
- Finely chopped onion – 1 small
- Chopped tomato – 1 medium
- Diced cucumber – ½ cup
- Fresh coriander leaves, chopped – 2 tbsp
- Pomegranate arils – 2 tbsp
- Green chili, finely chopped – 1 (optional)
For the Chaat Dressing
- Sarbu Black Salt – 1 tsp, or adjust to taste
- Roasted cumin powder – ½ tsp
- Freshly ground black pepper – ¼ tsp
- Fresh lemon juice – 1 tbsp
- Extra virgin olive oil – 1 tsp (optional)

Instructions
Step 1: Prepare the Sprouts
First, wash the sprouted green moong thoroughly under running water. Next, drain the sprouts well. However, if you prefer a softer texture, steam them for 3–5 minutes. Alternatively, use the sprouts as they are for a crunchy texture.
Step 2: Prepare the Vegetables
Meanwhile, finely chop the onion, tomato, cucumber, coriander, and green chili. After that, place the vegetables in a large mixing bowl. Then, add the prepared green moong sprouts. Finally, mix everything gently.
Step 3: Make the Dressing
Next, add Sarbu Black Salt, roasted cumin powder, black pepper, lemon juice, and olive oil to a small bowl. Then, whisk everything until well combined. Afterward, keep the prepared dressing aside.
