Ingredients
For the Khichdi

- 1 cup samak rice (barnyard millet), rinsed
- 2 medium potatoes, peeled and diced
- 2 tbsp roasted peanuts, coarsely crushed
- 2 tbsp ghee
- 1 tsp cumin seeds
- 2 green chilies, finely chopped (optional)
- 1-inch ginger, grated
- 1½ tsp Sarbu Rock Salt (adjust to taste)
- ½ tsp black pepper powder
- 3 cups water
- 2 tbsp fresh coriander leaves, chopped
- 1 tbsp fresh lemon juice
For Garnishing
- Fresh coriander leaves
- Lemon wedges
- Roasted peanuts (optional)
Instructions
Step 1: Prepare the Tempering
- Heat the ghee in a pressure cooker or heavy-bottomed pan.
- Add cumin seeds and let them splutter.
- Add the grated ginger and green chilies. Sauté for 30 seconds until fragrant.
Step 2: Cook the Potatoes
- Add the diced potatoes and cook for 4–5 minutes until they begin to soften.
- Stir in the crushed peanuts and sauté for another minute.
Step 3: Add the Samak Rice
- Add the rinsed samak rice to the pan.
- Season with Sarbu Rock Salt and black pepper.
- Mix gently to coat the grains with the spices.
Step 4: Cook the Khichdi
- Pour in 3 cups of water and stir well.
- Pressure Cooker: Cook for 2 whistles on medium heat and allow the pressure to release naturally.
- Pan Method: Cover and cook over low heat for 15–18 minutes, stirring occasionally, until the samak rice is soft and the water is absorbed.
Step 5: Finish & Serve
- Add the lemon juice and gently fluff the khichdi with a fork.
- Garnish with chopped coriander and roasted peanuts.
Serve hot with yogurt or vrat-friendly raita.
