Ingredients

For the Roasted Chickpeas

  • 2 cups boiled chickpeas (kabuli chana), drained and patted dry
  • 1 tbsp olive oil
  • ½ tsp Sarbu Black Salt
  • ½ tsp roasted cumin powder
  • ¼ tsp black pepper
  • ½ tsp paprika or red chili powder (optional)

For the Chaat

  • 1 small onion, finely chopped
  • 1 medium tomato, finely chopped
  • ½ cup cucumber, finely diced
  • 2 tbsp fresh coriander leaves, chopped
  • 2 tbsp pomegranate arils
  • 1 green chili, finely chopped (optional)

For the Dressing

  • ½ tsp Sarbu Black Salt
  • 1 tbsp fresh lemon juice
  • ½ tsp roasted cumin powder
  • 1 tsp extra virgin olive oil

For Garnishing

  • Fresh coriander leaves
  • Pomegranate arils
  • Lemon wedges
  • A light sprinkle of Sarbu Black Salt

Instructions

Step 1: Roast the Chickpeas

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the boiled chickpeas with olive oil, ½ tsp Sarbu Black Salt, roasted cumin powder, black pepper, and paprika.
  3. Spread them evenly on a baking tray.
  4. Roast for 20–25 minutes, stirring halfway, until golden and crispy.

Alternative: Roast the chickpeas in an air fryer at 190°C for 15–18 minutes, shaking the basket halfway through.

Step 2: Prepare the Chaat

  1. In a large mixing bowl, combine the chopped onion, tomato, cucumber, coriander, pomegranate arils, and green chili.

Step 3: Make the Dressing

In a small bowl, mix together:

  • ½ tsp Sarbu Black Salt
  • Lemon juice
  • Roasted cumin powder
  • Olive oil

Step 4: Assemble

  1. Add the warm roasted chickpeas to the vegetables.
  2. Pour the dressing over the mixture.
  3. Toss gently until everything is evenly coated.

Step 5: Garnish & Serve

Transfer the chaat to a serving bowl.

Garnish with fresh coriander, pomegranate arils, a squeeze of lemon, and a light sprinkle of Sarbu Black Salt. Serve immediately while the chickpeas are still crisp.
