Ingredients

For the Paratha Dough

  • 2 cups rajgira (amaranth) flour
  • 2 medium boiled potatoes, mashed
  • ½ cup grated bottle gourd (lauki), lightly squeezed (optional)
  • 2 green chilies, finely chopped (optional)
  • 1-inch ginger, grated
  • 1 tsp Sarbu Rock Salt (adjust to taste)
  • ½ tsp roasted cumin powder
  • ¼ tsp freshly ground black pepper
  • 2 tbsp fresh coriander leaves, chopped
  • Water, as needed
  • 2 tbsp ghee or cold-pressed oil (for cooking)

For Serving

  • Fresh yogurt
  • Vrat-friendly mint chutney
  • Lemon wedges

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the rajgira flour, mashed potatoes, grated bottle gourd, ginger, green chilies, coriander, roasted cumin powder, black pepper, and Sarbu Rock Salt.
  2. Mix everything together.
  3. Gradually add water, little by little, and knead into a soft, smooth dough.
  4. Cover the dough and let it rest for 10 minutes.

Step 2: Shape the Parathas

  1. Divide the dough into 8 equal portions.
  2. Place one portion between two sheets of parchment paper or lightly greased plastic.
  3. Gently flatten it with your hands or roll it into a 5–6 inch circle.

Step 3: Cook the Parathas

  1. Heat a non-stick tawa over medium heat.
  2. Carefully transfer the paratha onto the hot tawa.
  3. Cook for 2–3 minutes on one side.
  4. Flip, brush with a little ghee or oil, and cook for another 2–3 minutes until golden brown spots appear on both sides.
  5. Repeat with the remaining dough.

Step 4: Serve

Serve hot with fresh yogurt, vrat-friendly mint chutney, and lemon wedges.
