Ingredients

For the Aloo Jeera

  • 4 medium potatoes, boiled, peeled, and cubed
  • 2 tbsp ghee
  • 2 tsp cumin seeds (jeera)
  • 2 green chilies, finely chopped (optional)
  • 1-inch ginger, grated
  • 1 tsp Sarbu Rock Salt (adjust to taste)
  • ½ tsp freshly ground black pepper
  • ½ tsp roasted cumin powder
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh coriander leaves, chopped

For Garnishing

  • Fresh coriander leaves
  • Lemon wedges

Instructions

Step 1: Prepare the Tempering

  1. Heat ghee in a heavy-bottomed pan over medium heat.
  2. Add cumin seeds and let them crackle until aromatic.
  3. Add the grated ginger and green chilies. Sauté for about 30 seconds.

Step 2: Cook the Potatoes

  1. Add the boiled potato cubes to the pan.
  2. Sprinkle Sarbu Rock Salt, black pepper, and roasted cumin powder.
  3. Toss gently so the potatoes are evenly coated with the spices.

Step 3: Roast

Cook the potatoes for 8–10 minutes, stirring occasionally, until they develop a light golden crust while remaining soft inside.

Step 4: Finish & Serve

  1. Turn off the heat.
  2. Add fresh lemon juice and mix gently.
  3. Garnish with chopped coriander leaves.

Serve hot with yogurt, vrat ki kadhi, or samak rice khichdi.
