Ingredients
For the Paneer Tikka

- 300 g paneer, cut into 1-inch cubes
- 1 medium green capsicum, cut into squares (optional if permitted during your fast)
- 1 medium red capsicum, cut into squares (optional)
- 1 medium onion, cut into petals (optional if followed in your fasting tradition)
For the Marinade
- ½ cup thick curd (hung curd)
- 1 tsp Sarbu Rock Salt (adjust to taste)
- ½ tsp freshly ground black pepper
- 1 tsp roasted cumin powder
- 1-inch ginger, grated
- 1 green chili, finely chopped (optional)
- 1 tbsp fresh lemon juice
- 1 tbsp fresh coriander leaves, finely chopped
- 1 tbsp ghee or cold-pressed oil
For Garnishing
- Fresh coriander leaves
- Lemon wedges
Instructions
Step 1: Prepare the Marinade
- In a bowl, combine the hung curd, Sarbu Rock Salt, black pepper, roasted cumin powder, grated ginger, green chili, lemon juice, coriander, and ghee.
- Mix until smooth and creamy.
Step 2: Marinate
- Add the paneer cubes and vegetables (if using) to the marinade.
- Gently coat each piece without breaking the paneer.
- Cover and refrigerate for 30 minutes.
Step 3: Grill the Tikka
Oven Method
- Preheat the oven to 200°C (400°F).
- Thread the paneer and vegetables onto skewers.
- Place them on a lined baking tray.
- Bake for 12–15 minutes, turning once halfway through.
Pan Method
- Heat a grill pan with a little ghee.
- Cook the marinated paneer for 3–4 minutes on each side until lightly golden.
Step 4: Serve
Transfer the tikka to a serving platter.
Garnish with fresh coriander and serve hot with lemon wedges and vrat-friendly mint yogurt dip.
