Ingredients

For the Chaat

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp ghee or cold-pressed oil
  • 1 tsp Sarbu Rock Salt (adjust to taste)
  • ½ tsp roasted cumin powder
  • ½ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh coriander leaves, chopped
  • 2 tbsp fresh mint leaves, chopped
  • ¼ cup pomegranate arils
  • 2 tbsp roasted peanuts, coarsely crushed

For Garnishing

  • Fresh coriander leaves
  • Pomegranate arils
  • Lemon wedges

Instructions

Step 1: Cook the Sweet Potatoes

Roasting Method (Recommended):

  1. Preheat the oven to 200°C (400°F).
  2. Toss the sweet potato cubes with ghee or oil.
  3. Spread them on a baking tray and roast for 18–20 minutes, turning halfway through until tender and lightly caramelized.

Alternatively: Steam or boil the sweet potatoes until just tender.


Step 2: Season the Chaat

  1. Transfer the cooked sweet potatoes to a large bowl.
  2. Add Sarbu Rock Salt, roasted cumin powder, black pepper, and lemon juice.
  3. Toss gently to coat evenly.

Step 3: Add Fresh Ingredients

  1. Fold in the chopped coriander, mint leaves, roasted peanuts, and pomegranate arils.
  2. Mix gently without breaking the sweet potato pieces.

Step 4: Garnish & Serve

Transfer the chaat to a serving bowl.

Garnish with extra coriander, pomegranate arils, and a squeeze of fresh lemon. Serve immediately while slightly warm or at room temperature.
